Instructions
  1. Preheat oven to 350 degrees F. Butter a round cake pan.
  2. Mix first five ingredients in mixer. Pour into buttered cake pan and bake 50 minutes. Cool completely.
  3. Cut out a paper pattern of the St. James Cross (Google it). Put the paper pattern on the cake and sprinkle powdered sugar over the entire cake top. Remove paper pattern carefully to reveal cross design in cake.

  1. Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.
  2. Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples.
  3. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes.
  4. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

  1. In a heavy bottomed pan, on medium heat, heat milk and rice.
  2. Grind the saffron with a little bit of sugar and add it to the milk.
  3. Meanwhile, soak the raisin in a little bit of water to help puff them up.
  4. Keep stirring the pan and make sure it does not burn at the bottom.
  5. Cook until it is of desired thickness.
  6. Add the sugar and mix well.
  7. Add the dry fruits – raisins (without the water), pistachios, and almonds
  8. Turn off the flame and add the powdered cardamom.
  9. Serve hot or cold.
Recipe Notes

Tips:
1. If you are making the rice just for the Kheer, over cook the rice just a little.
2. This is a great recipe if you don’t have a lot of time but alternatively, you can add in raw rice and cook it in the milk and it tastes great. But be very careful and and keep stirring frequently.
3. If you like a smoother texture of rice in the kheer, just mash it lightly before adding it to the Milk.

  1. Add water to the reserved liquid to make 1-1/2 cups.
  2. In a 2 QT saucepan combine sugar, cornstarch, and salt. Add the 1-1/2 cups of cherry liquid. Cook over medium heat until sugar is dissolved, about 1-2 minutes.
  3. Stir in butter, cinnamon, cloves, and lemon juice. Continue cooking, stirring constantly, until mixture thickens and comes to a boil. Boil for 1 minute. Stir in cherries.

*Janice substitutes 1/4 each of ground cinnamon and cloves in place of the whole spices.

  1. Spray a 9 by 5 by 3-inch metal loaf pan with nonstick spray. Line the pan with plastic wrap, allowing the excess to hang over the ends and sides.
  2. Combine the crushed amaretti cookies and the melted butter. Put in the lined pan and press down to firm and form a crust.
  3. Whisk 1/2 cup of the sugar, the egg yolks, lemon juice, lime juice, limoncello, and salt in a large metal bowl to blend. Set the bowl over a saucepan of simmering water (do not allow the bottom of the bowl to touch the water). Whisk the egg mixture until it is thick and creamy, and a thermometer inserted into the mixture registers 160 degrees F, about 5 minutes. Set the bowl of custard into another bowl of ice water to cool completely. Stir in the zest.
  4. Using an electric mixer, beat the cream and remaining 1/4 cup sugar in another large bowl until firm peaks form. Using a large rubber spatula, gently fold the whipped cream into the custard. Spoon the mixture onto the prepared crust. Fold the overhanging plastic wrap over the custard and freeze until frozen, at least 8 hours or up to 3 days.
  5. Unfold the plastic wrap. Invert the semifreddo onto a platter and peel off the plastic wrap. Cut the semifreddo into 1-inch slices and sprinkle with crushed amaretti cookies and serve.

  1. Preheat over to 350 degrees.
  2. Beat almond paste until soft and pliable. Add eggs, one at a time. Beat in the sugar. Add butter and beat until the batter is well creamed.
  3. Sift together dry ingredients. Stir into creamed mixture. Pour into the prepared pan. (Sliced almonds may be sprinkled on top.)
  4. Bake for 40-45 minutes. Cool.
  5. Serve sprinkled with powdered sugar and fresh berries on the side, or with berry sauce and whipped cream.
